Sumac is traditionally used in Middle Eastern and Mediterranean cuisine as a seasoning for meats, poultry, fish, vegetables and salads. Sumac spice is made by drying and then grounding the berries of a type of perennial shrub, which are rich in antioxidants and vitamins.
Ground sumac is deep red in color and has a pleasant acidity and freshness with slightly tart notes. Its flavor is often compared to that of lemon.
