Sichuan pepper is a unique spice, iconic for Sichuan cuisine. It represents the dried outer husk of the berries of the prickly ash tree. Unlike black pepper, Sichuan pepper is not spicy. Its uniqueness lies in the characteristic tongue-tingling "málà" sensation, delicately combined with citrus notes and woody undertones. It is an essential ingredient in the popular Chinese Five Spice mix.

 

Use it freshly ground or lightly toasted in a dry pan to season chicken, duck, fish, tofu, in marinades, chili oil, and sauces.
