Mole is the festive dish of Mexico - weddings, celebrations, fiestas can not happen without a big mole. It's like a paella in Spain. Each region and each family has its own recipe for Mole and jealously guards it.
Legend has it that the Mole was invented by the nuns of a very poor monastery that were about to welcome an archbishop. Nuns collected all the products they had in the monastery (dried chillies, old bread, nuts, some onions, garlic and olive oil), slaughtered the only old turkey, mixed everything and cooked it slowly on a low heat to soften the meat. The archbishop liked the dish very much. It became famous and worshipers spread the recipe throughout Mexico. The first written recipes for Mole date back to 1800.
